Not all pasta is created equal...
Admittedly, I'm a huge pasta fan. And as an enthusiastic traveler to Italy, I've always been completely won over by traditional Italian pasta. However, since visiting and touring the pasta factory in Bad Teinach, I've changed my mind.
Even the journey through the picturesque Teinach Valley is a delight. After an overnight stay with a delicious breakfast in a charming, family-run guesthouse, we chug along past buildings that are sometimes enchanting, sometimes picturesque, experiencing landscapes that are sometimes wild, sometimes romantic, and meeting many friendly people… The start of our exploration of the Teinach Valley couldn't have been better…
Today, my daughter and I have booked a tour of the pasta factory . We're excited to see what they have to offer.
First impression: Wow!!! Where else can you find so many different types of pasta? Over 200 different and individually produced varieties are offered here and presented in a bright, appealing setting.
We were given a tour of the production facilities, allowed to smell and taste the pasta (what a treat!), and listened to fascinating stories about the production of these unique noodles. The atmosphere was relaxed and cheerful. It was immediately clear that this was a team at work, crafting the pasta with love, joy, and conviction. After all, we were in a manufactory – so everything was handmade!
So, what exactly is so special about these noodles? We'll ask the boss himself.
Dietrich Morlok is a nutritionist, inventor, and founder of the Bad Teinach pasta factory . He readily answers our curious questions with sparkling eyes.
Morlock: “To put it simply: Our pasta is made entirely from natural ingredients . Pure pasta, so to speak. It's produced completely without eggs, colorings, or other additives. This isn't just important for allergy sufferers, but for all health-conscious people. Our population has become very discerning – and that's a good thing! We're placing more and more value on healthy eating. And that should taste exceptional, too!”
Editor's note: Opinions certainly differ when it comes to taste. It's often the case that MSG is used liberally in kitchens…
Morlock: I don't want to come across as a nutrition guru here. But when it comes to glutamate, I say unequivocally: get rid of it! It impairs our sense of taste so much that it irritates our central nervous system. The result: the natural hormones at the receptors get thrown out of whack and send the wrong signals. The fatal consequence is that satiety regulation no longer works. In other words: after a meal "seasoned" with glutamate, my brain quickly sends the signal: hunger!! Clearly, significant weight gain is practically guaranteed!
That's why we follow our credo: only natural ingredients! Just try our wide range: we have pasta from A to Z!
Editor's note: From "A" as in pasta with amaranth. And "Z" for pasta with a delicate lemon note.
Morlok: Exactly. And in addition, we offer a wide and colorful range of different pasta shapes and flavors. We use regional herbs and spices and seasonal vegetables . And of course, our famous and high-quality Bad Teinach spring water is a must!
Our “sweet” noodles with cinnamon, chocolate & vanilla, with plums, apricots… are also exceptional and exceptionally popular .
Editor's note: My mouth is watering! I'll be surprising my family and guests with this soon! Thank you so much, Mr. Morlok, for taking the time!
D. Morlok: Always with pleasure!
We learn in our conversation that Dietrich Morlok is involved in the topic of food in a variety of ways. For example, he is one of the co-authors of the local cookbook, which compiles regional recipes from the cuisine of the Teinach Valley. Not to be forgotten are the numerous cooking events he organizes, all centered around pasta.
We leave the pasta factory with two fully packed backpacks – two granola bars made right there in the factory are our snack for the road. What a day!
